Uplifting bubbles for modern times, Sherbet Daydream is our effervescent blend of redcurrant wine, pickled rhubarb, douglas fir, and juniper berry kefir. Using a signature pickled pine as a point of inspiration, we pickle rhubarb in a liquor that we infuse with foraged Douglas fir. This rhubarb is macerated in a redcurrant wine, and at blending time we add just a tiny amount of the pickle juice to pique the acidity. A juniper water kefir provides the backbone of the blend. Vegan friendly.
