MURI Koji Rice Series (Limited Release)

This is the first in our Koji Rice Series and is technically inspired by Japanese amazake, traditionally a non-alcoholic cousin of sake. We steam cook rice and ferment with koji, triggering an enzymatic transformation that turns the starch into fermentable sugars. A secondary fermentation develops acidity. This rice ‘wine’ is blended with a water kefir infused with smoked lavender and mahleb, a tiny cherry stone that add delicate notes of vanilla, cinnamon and almond.

The blend is an unfiltered, still expression that captures the earthy and herbaceous notes in the koji rice. Possessing a silky, luxurious mouthfeel, the blend is medium-dry, with soothing warm undertones.

Food Pairing: Crunchy salads, Danish ‘Risalamande,’ Spicy salads, Sushi, Hokkaido milk pudding, Cheesecakes.
